Sweet & Spicy Mexican Style Grilled Shrimp Skewers

Ingredient List

Shrimp Skewers

  • 3 tablespoons from 1 jar Mezco™ Sweet & Spicy Spice Blend
  • 3 tablespoons vegetable oil
  • 1/2 teaspoon salt
  • 24 uncooked deveined peeled medium shrimp (about 1 lb)
  • 8 bamboo skewers (5 or 6 inch)

Rice

  • 2 1/2 cups water
  • 1 1/2 cups uncooked regular long-grain white rice
  • 1/2 teaspoon salt
  • 3 tablespoons finely chopped fresh cilantro leaves
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1 lime, cut into wedges, for serving

Preparation

  1. In large bowl, stir together spice blend, vegetable oil and 1/2 teaspoon salt. Add shrimp; toss to evenly coat with spice mixture. Cover with plastic wrap; refrigerate at least 30 minutes or up to 2 hours to marinate.
  2. Meanwhile, soak skewers in water at least 30 minutes to prevent burning.
  3. In 2-quart saucepan, heat 2 1/2 cups water to boiling. Add rice and 1/2 teaspoon salt; cover, and reduce heat to simmering. Cook 16 to 18 minutes or until water is absorbed and rice is just tender. Gently stir cilantro, lime juice and olive oil into cooked rice; fluff with fork.
  4. Heat gas or charcoal grill. Thread 3 shrimp on each skewer, leaving 1/4-inch space between each shrimp.
  5. Place shrimp on grill over medium heat. Cover grill; cook 5 to 7 minutes, turning once, until shrimp are pink. Serve warm over cilantro-lime rice with lime wedges.

Tips

  • Skip the rice and serve these flavorful grilled shrimp as an appetizer for your next dinner party.
  • Look carefully at the sizing on the bag of shrimp. Medium shrimp should be 31 to 35 per pound. Not all manufacturers label shrimp the same, but most will tell you how many shrimp per pound.
  • If you can’t find 6-inch bamboo skewers, use heavy-duty scissors to snip the skewers to the desired length.
  • Save yourself some time, and purchase shrimp already peeled and deveined.
